SPAC! test-kitchen series[:around the dunia in 80 dishes!], opened with - East Afrikan hadithi. This year features pan-Afrikan conversations and vibes/pairings. Because sankofa! (It is not taboo to go back for what you may have forgotten).

A is for ugali na sukuma-wiki (a gomen remix)

ugali, (known as o/busuma in luhya,) is commonly referred to as the favourite food of the mluhya.

      it was originally prepared with indigenous crops such as sorghum and millet, and is traditionally brown in its appearance.

sukuma wiki is (Ki/swahili for ’to push/through the week’), the Kenyan version of fried collard greens /kale. Cooked in onions and spices.  


on the vibes tip: 

pairs well with ALL stews.
